Gluten-Free Peanut Butter Cookies

 Ingredients:

-         270g Peanut butter                                                

      240g  light brown sugar

      1 egg


Directions:


1.      Blend the peanut butter and brown sugar in the bowl fitted with the paddle attachment.

 

2.      Beat the egg, then add it to the peanut butter mixture. Blend on low speed just until the mixture comes together.

 

3.      Using a portion scoop, portion the dough into paper-lined sheet pans. Press each ball of cookie dough down using a fork, to flatten slightly.

4.      Bake at 375 F until set, approximately 8 to 11 minutes. Allow the cookies to cool completely before removing them from the baking sheet.

5.      Let it cool. Then eat and enjoy.

Bakery series #3: The Coffee Nest & Bake Shop

 The Coffee Nest & Bake Shop


This quaint little shop has been at: 106 North Bay Ave. Beach Heaven, NJ. 08008 for 4 years. But, they have been on the island for 10 years and were located next door to their current location.


When I visited the first time, the shop was about to close.
 In the picture above there are some cherry scones, strawberry rhubarb cake with crumb topping. In the basket they had a bag of bagels inside. This is all they had left that day.


A couple days later, I went back. The second time I went, I saw on display: pop-tarts, muffins and scones.

 

         I also found a cookies and cream cake. Doesn't that look so good!!

 

I would definitely recommend going to The Coffee Nest & Bake Shop.

The long-lost but not forgotten recipe

 Now, you are probably wondering what I meant by calling this particular story “The long-lost recipe”. Well, that is a very good question and I have a pretty good reason for calling it that.


You see I stopped going to this family's house, when the youngest went to college. Somehow, that baking cooky book was misplaced. You might be wondering if that recipe/book played such a big role in my life, how could I have forgotten it? Well, time passed. I had forgotten, as sometimes happens when you are busy doing other things.

 Have you ever been to your grandmother's house or looking though your mother's cookbook? I am sure you have. Have you ever asked them about the story behind how they found that recipe?

Well, I for one have been asked that many times. 

In the section of "Feature Stories" I will be telling different stories about "The story behind that recipe". Now, this will happen randomly. So, keep your eyes open for the story behind three of the many recipes that I personally have made numerous times.

I have the key to the storybook and am about to unlock it and tell all of you how I ended up with a recipe.

Continuation of the Bakery series #1: Marvel's Bakery

 This is a continuation of the Bakery series #1: Marvel's Bakery, and I just remembered that I have a perfect recipe for county biscuits. These are my rendition of Marvel's Buttermilk Biscuits. I baked my favorite recipe for these delicious, buttery, and scrumptious biscuits.

*Note: If you don't have a stand mixer, just use a bowl and a pastry blender (cutter), that is how I usually do it but I was just thinking that doing it in the stand mixer might work. Using a stand mixer might take less time.*

*If you do decide not to use a mixer, that's fine. Just to reassure you the steps will basically be the same (if you do it in a bowl and use a pastry cutter).

Bakery visit series #1: Marvel's Bakery

You can visit the Marvel's Bakery at 4 W Maryland Ave, Long Beach, NJ. 08008. 

 

         This corner bakery and coffee shop is the perfect start to any day. This corner coffee and donut shop sells coffee, donuts, pastry and other delicious baked goods. For the past 11 years I have been here for morning coffee, donuts, and bagels/cream cheese when on summer vacation. You might get lucky and be there when they have made biscuits. If you do get to try their biscuits, their delicious buttermilk biscuits are made with egg, cheese and sausage. If you just want to have a biscuit with egg (you will need to get there early. They are so good that they run out very quickly). 


       What makes this corner coffee and donut shop so great, especially for little kids and families because they can actually peek and watch the donuts being made. 


      After they are cooked they get tossed and swirled around in this turn table, to cool them down. They are just waiting to be picked up by the workers and eaten by customers.



     In addition to donuts and coffee, Marvel's Bakery has breakfast pastries like Cinnamon Buns and Blueberry Scones, just to name a few.

    They also make bagels. While I was thinking about Marvel's Bakery and what recipe that I was going to make that corresponded with it, I thought of my favorite 2-ingredient bagels. 
  
    Now, you might be wondering how 2- ingredient bagels would be good. Well, I am here to tell you that I, for one love these delicious bagels. I hope you do too.

           Yay, summer is here! Time to take a trip to the Jersey Shore!!


    I want to introduce "The bakery series, the LBI Edition".

   In this bakery series I go to different bakeries. Afterwards, I am going to write a review about the bakery, the service and finally tell you all about the delicious bake good that I tried there. So, the next time you go to the Jersey Shore, you can be sure that there is something sweet for you to try.

Happy belated 4th of July 2021

 Happy belated 4th of July, everyone. 

In the celebration of this 4th of July, I decided to make my favorite red velvet cake from www.sallysbakingaddction.com. Since the colors are red, white and blue. I added red food coloring to one layer and then the other layer I did it in blue.


Changes that I made:


Instead of making the frosting like the recipe says I did a half of a cup of butter and 8 oz. of cream cheese. (This makes it a little less soft and it is more easy to spread and you can take a little more time vs. following exact the recipe says).
- Also I left out the salt.
- Instead of whipping the egg white last I did it first (In my opinion it's easier).

If you like red velvet cake I would highly recommend this recipe. I hope you like it as much as I do.
